Ølands-Tabbouleh (4 pers.)

400 g ølands wheat kernels
5-8 tbsp chopped parsley
1 tbsp chopped mint
1 red chili, chopped
1 green chili, chopped
3-4 tomatoes, chopped
2 red onions, chopped
Sea salt
Pepper
Dressing:
3 tbsp olive oil
1 tbsp lemon juice

Boil the ølands wheat kernels as indicated on the package. Make a dressing by mixing olive oil
and lemon juice. Mix the varm kernels with parsley, mint, chili, tomatoes and red onions. Season
the salad with sea salt and pepper and serve right away. Save leftovers in the fridge and use them
for lunch.
