Sandwich with guacamole, Sweet onions, bacon and turkey (3 servings)


  • 3 pcs. Madame Butterfly bread
  • Guacamole (see the recipe below)
  • Sweet onions (see the recipe below)
  • 6 slices turkey
  • 6 slices bacon
  • 125 g mozzarella, slices
  • 50 g carrots, grated
  • 10 g spinach leaves



  • 2 avocados
  • 1 medium size onion, finely chopped
  • 1 clove garlic, minced
  • 0,5 lemon, juiced
  • 1 tomato, chopped
  • salt
  • cayenne pepper
  • pepper

Chop onion and tomato, mince garlic, squeeze lemon juice. Then peel and mash avocados in a medium serving bowl, add all the other ingredients and stir.

Sweet onions:

  • 3 red onions
  • 4.5 dl vinegar
  • 1dl sugar
  • 1 teaspoon of peppercorns
  • 6 pieces of star anise
  • 5 pieces of bay leaves

Cut the onions into thin slices and put them in a clean glass. Boil the vinegar together with sugar, add spices and peppercorns. Boil for 10 minutes and then pour the vinegar mixture over the onions. Close the glass and keep it cool. The onions are best the day after, but they can be eaten, when they are cooled.

Toast the bread for 2 minutes or put in the oven for 4min in 180C.

Put guacamole, turkey, sweet onions, bacon, mozzarella, carrots and spinach in the bread.
