Spelt patties with melon salad (4 pers.)

Spelt patties:
300 g speltkernels
3 potaoes
4 carrots
100 g celeriac
1 clove garlic
10 g fresh chili
2 shallots
3 mushrooms
1 dl oat flakes
1 tsp salt
10 g fresh thyme
3 eggs
½ tsp pepper
3 tbsp rape seed oil for frying
Melon salad:
300 g water melon
300 g honeydew melon, cantaloupe melon or other melon
100 g radishes
50 g fresh mint

Boil the spelt kernels as indicated on the package. Peel and grate the potatoes, carrots and celeriac.
Chop garlic, chili, shallots, mushrooms and thyme finely. Mix all the ingredients thoroughly. Let the
mixture rest for 1 hour. Heat the pan and fry thin patties in rapeseed pil until they become golden.
Cut the melons in bite-sized pieces. Slice the radishes and peel off the mint leaves. Mix melon, radishes
and mint and serve with the spelt patties.
