Tofu salad with öland wheat













Tofu salad with öland wheat (4 pers.)

300 g öland wheat200 g tofu
10 g basil
10 g lemon zest
15 g lemon juice
50 g sesame seeds
10 g ginger
150 g pomegranate
100 g mixed salad
100 g cucumber
50 g bell peppers
50 g soy sauce
14 g olive oil

Preheat the oven at 190 °C. Cut the tofu into small cubes and mix it with soy sauce, sesame seeds, grated ginger, grated lemon zest and lemon juice. Put it in an ovenproof dish and bake it for 45 minutes, stirring every 10-15 minutes. Boil the öland wheat as indicated on the package. Chop basil and mix it with the
boiled öland wheat kernels and the olive oil.  Cut the cucumber and bell pepper into small cubes,
peel the pomegranate and wash the salad. When the tofu is done, mix all the ingredients into a salad.
